職務內容 儲備店主管: ※ 需具有連鎖餐飲業店長2年以上經驗者※ 1.績效目標達成，超越顧客滿意度。 2.維持高營運標準，與員工維持正面的關係。 3.維護財務、設備及生財器具資源管理，執掌餐聽務料盤點、訂貨之良好控管。 4.願與所屬團隊共享工作成就，面對缺失勇於承擔不規避，並與團對虛心改善檢討。 5.熟悉餐廳整體運作及成本控制，喜歡與人及新事務接觸者。 6.須配合營運進行輪調 廚務主管: 1.在主管人員指導之下，依據既定政策，從事各項業務之設計，規章之草擬（如：物料管理、成本控制）。 2.食品安全衛生把關。 協助主管規劃生產、行銷計畫制度和中長期策略規畫及年度營運方針落實，以提昇經營績效。 3.協助公司之組織規劃、制度流程設計，以及經營分析之企劃。 4.負責費用預估、控管及報表製作。 5.訂貨、驗收、盤點等各類食材標準維護，並進行系統操作。 6.協助外場各項營運支援。 儲備幹部: 【外場】 1.協助主管推展餐廳業務。 2.負責顧客事件的處理，並向主管報告。 3.營業前巡視餐廳清潔、擺設、備品、用具和設施是否完善。 4.督導人員的服裝儀容、服務態度，禮貌及衛生安全等觀念。 5.負責服務員的工作分配，稽核出勤狀況及編排工作班表。 6.佈置及清理餐桌。 7.為顧客帶位或安排座位。 8.將菜單遞交顧客，答覆有關餐飲問題，必要時提供建議。 9.記錄顧客所點菜餚，並通知廚房或內場做餐送餐。 10.上菜並提供有關用餐的服務。 11.落實結帳流程。 【內場】 1.環境清潔及衛生管理。 2.負責檢查物料，並對食材成本落實管控。 3.負責備料、擺盤及出餐作業流程。 4.確認出餐品質與速度。 5.配合主管行政作業程序。 6.細心肯負責、穩定性高。 內外正職: 外場： 1.負責跑單、擺盤、送餐及聯繫內外場之工作。 2.負責客人帶位、倒水、點餐等工作。 3.於客人用餐完畢後，負責收拾碗盤與清理環境。 內場： 1.負責洗、剝、削、切各種食材，以完成烹飪的前置工作。 2.協助廚師測量食材的容量與重量。 3.依照客人的點單，準備不同菜色所需要的食材。 4.於出菜時負責菜餚擺盤或調整份量之工作。
